There is no "right way" - what he's doing sounds fine. Any exercise is
better than none, and the fact that he's paying attention to what he
eats matters more than the specifics. People have managed to gain
weight, maintain their weight, and lose weight on all manner of diets.
The thing to do is find what works for him and understand that nothing
works forever unchanged so be prepared to adjust as necessary along the
way.
The shake you mention, however, contains a lot of calories and, at some
point, you have to consider calories in versus calories expended -
taking in more calories than you require will usually result in a weight
gain, not loss. Muscle gained usually isn't a bad thing but most people
starting out on exercise programs usually need to focus on losing body
fat first and then worrying about adding muscle once they're reached a
goal weight.
