    a pretty tasty recipe, isn't 5 hrs in the oven kinda long? Seems like
    it would make for a dry chicken.

    It would seem so, but it's actually nice and moist. The low temperature is
    key, and the chicken needs to be at least 3 lbs.

    Mimi Hiller's Sticky Chicken

    2 teaspoons salt
    1 teaspoon paprika
    3/4 teaspoon cayenne pepper
    1/2 teaspoon onion powder
    1/2 teaspoon thyme
    1/2 teaspoon white pepper
    1/4 teaspoon garlic powder
    1/4 teaspoon black pepper
    1 whole roasting chicken -- about 3 pounds
    1 cup chopped onions

    Combine all spices (first 8 ingredients) in small bowl.
    Rinse chicken, inside and out. Drain well.
    Rub spice mixture over skin and the inside of chicken.
    Place in a resealable plastic bag, seal and refrigerate overnight.

    When ready to roast, preheat oven to 250° F and stuff cavity with onions.
    Place chicken breast side down in roasting pan.
    Roast uncovered at 250ºF for about 5 hours,(that's not a typo,it's really
    250º. Anything over 225º is safe as long as the chicken reaches an internal
    temperature of at least 155º, which this does, and more).
    Baste occasionally with pan juices or until pan juices start to caramelize
    on bottom of pan and chicken is golden brown.

    Serves 4.

    to know nearly everything pretty soon..not sure that is good. <g>

    It's cooked at a very low temperature. I've tried it, and we liked
    it. That said, I like my high temperature, quick roasted birds better.
    It seems to draw out the flavor of the poultry rather than relying on
    the spices used to create taste.

  16. I made this for the first time on Christmas. Being rather doubtful
    about the temperature, I stuck a thermometer in the bird. It came up to
    temperature an hour and a half too early, but I left the chicken in the
    oven for the whole time. It was still remarkably juicy and, of course,
    more than safe. After we ate the meat, the leftovers made a great
    Mimi-chicken soup.

    No, I've never managed to make it, even after all these years of having the
    recipe in my "must try" list. I just never get around to prepping the
    chicken the night before. I guess roast chicken is a spur-of-the-moment
    thing for me. I buy a chicken at the store, take it home and roast it.

    Does anybody ever prepare the chicken either the morning you're going to
    cook it, or just before popping in the oven? I really should try this once.

    Yes, I've prepped sticky chicken both ways - overnight and several hours
    before roasting. I didn't notice any difference in flavor; the chicken is
    delicious either way.

    I love the way the house smells while the chicken is roasting. The
    fragrance is heavenly!

    I have to agree on the house smells... it was so strong it nearly made me
    sick... it was a good smell don't get me wrong... it was just so strong.
    So, I haven't done it again. Thank goodness for a whole house fan.
