Nothing is easier... go for it. With roast beef the larger the better, five pounds is my low limit. I have no problem getting top round to cook up tender... maybe it's my technique for massaging in the seasoning... I use plenty of oil and really work that rump! 😉
What's the brand and pattern of the plate? I've seen it before, somewhere, and have always admired it.
It's pretty old, well not ancient, like 30 years. Mikasa Chrarisma Black. I actually did a search, didn't realise it's worth a few bucks, one dinner plate goes for $16. I have all the cups and saucers too, never used. I really don't like it that much for every day ware as it's not microwaveable, has real platinum trim.
If someone wanted to buy it I can make a good deal.

Yeah, well, fat happens. Actually it didn't shrink all that much. Was even better the next day, made wonderful cold roast beef sandwiches. Of course my six cats didn't complain, they ate more than me.
Yep,that is for sure. Don't take much effort either.. I guess fork to mouth don't burn many calories.

In my haste I failed to mention the part I like best besides the kitty. You did a great job of tying the roast. Ties neatly spaced, nice and snugged up and the knots lined up in a row. Good detail!

Lots of fresh ground black pepper. A good sprinkling of Penzeys English roast beef seasoning. A wee bit each of granulated garlic and msg ('bout 1/4 tsp each - yes, I sometimes use msg). Coated with mild olive oil and well massaged. Then sprinkled on top with about a tsp kosher salt.
Ya know, I stuck in the meat thermometer but I never looked at it... just roasted it at 325ºF. for 25 minutes per pound (was 8 1/2 lbs)... let it rest 30 minutes. Was perfect. I typically roast beef by weight rather than temperature... even the best meat thermometers lie when going for rare or near rare centers.
The best part was I bought it on a BOGO sale, buy one at $3.99/lb get another same weight free... so cost only $2/lb. I still have another big meat in the freezer.

I don't lie... came thata ways, butcher did it. I coulda done it but this time I didn't. I actually use the French style butcher twine, thinner and made of linen... I have a cone when new contained a thousand meters... Williams-Sonoma used to sell it, maybe still.
