The ends are more medium well which is to be expected in all fairness.
That is the first part he plated. It's not prime rib..And the flash
fired and washed it out a bit. The finished shot of the completed roast
    unsliced could not be better.

    Beautifil china pattern. :-)

That's from my eclectic collection of everyday stuff, Mikasa - Charisma
Black, I have like half a service for eight left.

Mikasa... They used to have an outlet store near here.
    Affordable stuff and nice!

    Well done!

Thank you. I was too lazy that night to prepare anything much, so just
the beef and corn (frozen). The roast was very tasty and juicy, and
    tender too for round.

Figures you'd be first to jump onto my meat! 😉

    <grinz>
I've not roasted meat in a while...... ;-D

The ends are more medium well which is to be expected in all fairness.

If you cook it at an initial high heat, then lower the temp for
240F for the remainder, you'll end up with perfectly rare-med-rare
beef all the way through, regardless of the cut. Cooking it at
325F will result in exactly what you see there.

My Guess is that Katz is just too stubborn to do it any other way
than his own, though. If he likes his meat that way, then that's
fine. But for most serious carnivores, that is too well-done for
most tastes and the uneven doneness of the roast is unacceptable.

The meat looks like roasting rump. Yum, just how I like it! But what are
you doing feeding that poor moggie on sweet corn? No wonder she looks a
    bit put out :-)

What's the brand and pattern of the plate? I've seen it before,
somewhere, and have always admired it.

It's pretty old, well not ancient, like 30 years. Mikasa Chrarisma
Black. I actually did a search, didn't realise it's worth a few bucks,
one dinner plate goes for $16. I have all the cups and saucers too,
never used. I really don't like it that much for every day ware as
it's not microwaveable, has real platinum trim.

If someone wanted to buy it I can make a good deal.

    Sheldon

But if you sell it, what will you have for the cat to eat out of?

Yes 1200 x 900 (1.08 MPixels) is sorta BIG. It was shot on high quality.
His Olympus C2020Z did a nice job with a focal lenth of 6.6 mm, exposed
1/30th second, Fnumber 2.0, flash fired, oriented top left. <G>

photography stuff.... I pick up camera, peer thru the "view finder" -
make sure I see what I am trying to photograph and hit the button...so
go easy on me, eh? 😉 Will have to ask DH to explain - he's the
    photographer in this family....

But I liked the way they looked....

Then you're not cooking it right. Like I said, and other will
vouch for the method: IOnitial high heat to crust up the outside,
    then low and slow (240-250F).

This is how all the quality prime ribs are cooked, and it works
for any roast that can be served med-rare or rare.
