I'm thinking that I just want to cook them and eat them.
Any suggestions on how I should prepare them?

I cooked the ribs last night. They were delish. I found the following
somewhere out on the web....
Barbecued Beef Ribs

PREPARATION:
Preheat oven to 450°.
Place the ribs on a rack in a shallow baking pan and roast in oven for

Remove the ribs and rack from pan and pour off the fat. Reduce oven
heat to 350°.
Return ribs to the pan, and pour the sauce over them.
Bake uncovered, basting occasionally, until rubs are tender, about 1
hour.
