  1. We're having two couples over for dinner on Friday. I'll be making
shrimp in a garlic sauce, rice pilaf, a salad and for dessert mocha
almond fudge Ice cream. I'm trying to think of a vegetable side dish to
go with this. I'll probably be sauteeing some peppers in with the
    shrimp, though. Any ideas?

Asparagus is really expensive at this time of the year - it's not *quite*
the season yet. I'd maybe do green beans with bacon and onion? Green bean
& cabbage stir-fry - you could add water chestnuts for crunch? Creamed
spinach? Simple steamed broccoli? Peas with pearl onion?

In any case, you might try to look for inexpensive strawberries to garnish
the ice cream with. They're just coming into season now and they're yummy!

Good luck, but let us know what you decide!

Since you are already having rice, I'd do something green.

Peas and mushrooms would go well?

Or fresh string beans with sesame seeds.

I am thinking spinach, but I am not sure what rice pilaf tastes like
(ages ago, i had a version that included chicken, peaches and tomatoes
but I doubt that's what you mean).

I the beans and sesame seeds, Kat! I do that quite often when beans are in
season. Sautee with a touch of sesame oil and butter, at the last moment I
add a splash of shoyu. I've been known to throw in onion, ginger, garlic
and water chestnuts, too, almost makes it a stir-fry.

    Mmmmm....... :-)
I can get sesame seeds cheap by the 5 lb. bag from the oriental market.
They keep for months in the freezer and I just re-fill the sprinkler jar
    from the bag.

I've been playing with sesame oil more often lately. It's wonderful with
    fresh ginger and garlic!

Soy, teryaki, hoisin and oyster sauces varied depending on my mood.

Asparagus is also excellent cut into short pieces and sauteed'.

That would be a good choice, I agree. Toast the seeds lightly by
shaking in a small dry pan over medium heat for a couple of minutes to
    heighten their flavor. -aem

Considering the garlic shrimp and the rice pilaf I'm not sure I'd want the
taste of ginger and soy sauce thrown in there unless she's going for an
Asian theme. But then again, you eat almost anything with soy sauce 😉

Yep, I'd keep it simple to go with the garlic shrimp and the pilaf.

I agree about the cross-cultural hazard, but it'll depend on what's in the
garlic sauce. If Ranee *doesn't* want an Asian theme, I'd recommend green
beans with lemon butter and hazelnuts (like Damsel makes). Green peas would
also be good (I like to pair them with mint in the springtime), but they
might already be part of the pilaf.

I would go simple -- steamed broccoli or roasted asparagus or
    something.

If you have a salad, you don't need a veggie as well unless there's
someone in the group who doesn't believe in raw greens. You could steam
some fennel or carrots, both of which are plentiful now. I bought some
asparagus on sale a couple of days ago.

I was thinking green as well. I don't think the sesame seeds (or any
of the Asian type ingredients) would go with the rest of the meal, but
perhaps with some thyme and butter.

Lemon butter and hazelnuts sounds wonderful! And you're right, the
shrimp in the garlic sauce bears no relation to Asian food, neither does
the pilaf, which is pretty simple actually.

That's kind of my thought. I tend not to buy out of season things
too often anyway, and especially when doing so will cost me so much.

I'm liking the green bean ideas. I thought of broccoli, but the
price of broccoli has been insane in our area lately. It was on sale
for something like 56 cents a pound a few weeks ago, and I managed to
miss it, and the price has been prohibitive since.

Heavens, no! It's quite simple, sauteed onion and garlic, add the
rice and stir to cook a little bit, pour in chicken broth, season with a
little salt and some coriander, cook as per normal rice. I toast some
pine nuts and toss them with the rice just before serving.
