If you have a salad, you don't need a veggie as well unless there's
someone in the group who doesn't believe in raw greens. You could steam
some fennel or carrots, both of which are plentiful now. I bought some
asparagus on sale a couple of days ago.

I was waffling between no additional vegetable and feeling like I
needed to round the meal out a bit more. Our kids will be in bed
already, but it will still be six people, two other couples, and I
wanted to make sure there was enough to eat as well as a variety of
    things that went together.

Heavens, no! It's quite simple, sauteed onion and garlic, add the
rice and stir to cook a little bit, pour in chicken broth, season with a
little salt and some coriander, cook as per normal rice. I toast some
pine nuts and toss them with the rice just before serving.

Oh, thanks for the reminder about pine nuts! I knew there was
something missing the last couple of times I made pilaf. -aem

Oh yeah, the pine nuts make a huge difference! I don't care for coriander
(cilantro) but throw in a bit of diced red bell pepper to the onion and
    garlic for a little colour.

I am thinking spinach, but I am not sure what rice pilaf tastes like
(ages ago, i had a version that included chicken, peaches and tomatoes
but I doubt that's what you mean).

Itn sounds DELICIOUS. I will definitely try that. Might do it instead of
the nasi goreng I am meaning to cook. But suddenly all these dinners
away from home are getting into my calendar, so it will have to wait a
    while.
