Lunch was good today. I made an egg salad sammy and put it on seeded Jewish rye with a couple of lettuce leaves. I made my own version of tomato soup. I took 2 cups of chicken stock, 2 cans of Contadina diced tomatoes (garlic seasoned) with juice and heated. I seasoned with S&P. Then I whooshed it in the blender a bit while slowly adding milk. Back into the pan to heat. I topped it with some home made croutons and just a small bit of grated parmesan.

And where's the picture? <g> Just kidding. How was the soup like that? You said how you did it, but you didn't say how it tasted. I like the idea, I'd like to try it.

That sounds good! Both the sandwich and the soup. I want to put a tomato soup together like that, so will try what you made.
Thanks!

The soup was pretty good. It wasn't like a traditional tomato soup but it was really good. It could have used some herbs but I'm not sure what I would have put in it.
