  1. Hello my friends. My Pc is working *NOW*, so I take advantage to ask you
    something :
    I know that the recipe of KFC is a secret. I would like to know (because an
    Italian friend asked me) if anyone has tried to reproduce it with success.
    If yes, could you please give me the recipe?

    The main "secret" seems to be frying the chicken in a pressure fryer.

    Just out of curiosity, why the sudden interest in KFC? If they don't
    have them in Italy, did you have it while traveling elsewhere?

    there. He is becoming mad because he loves too much KFC (he never tasted it

    You aren't missing anything. It is just the usual western fast food with
    way too much salt.

    Don't know how much of a "secret" it is -

    1) In some of my old cookbooks from the 30s and 40s, there are recipes for
    "Kentucky fried chicken", and they were published back when Harlan Sanders
    was just a pup - and

    2) in the late 40's and 50's, pressure-cooked-in-heated-oil chicken places
    were all the rage, and those chicken cookers popped up in commercial
    kitchens all over the place.

    In short -

    Use a tiny bit of onion and a tiny bit of garlic sauteed in oil with a
    little ham fat, like you are getting the oil-base ready for a roux - just
    enough of each so you can't taste any, as they used to say, and you'll
    probably be close enough in flavor.

    To infuse the chicken with flavored liquid, pressure cook the chicken in a
    little water containing the above and a dash of celery salt and a bit of bay
    leaf - (enough bay leaf to take out any "blood smell" but not enough to
    flavor the chicken with bay).

    (BTW - now you can store it in the refrig until you finish it.)

    To finish it, coat it by dipping it in (egg optional) /"baking-powdered-
    flour" and finish it quickly in a deep fryer or a hot skillet or hot oven.

    It is more a matter of the method of cooking than their secret ingredients IIRC
    is 11 secret herbs and spices. I remember KFC being really good when I was a
    kid, but from the early 70s it went down hill. I used to eat occasionally at a
    family run restaurant that served broasted chicken, a patented process similar
    to the one KFC uses. You could experiment with the coating and probably come
    up with something better than KFC, but the essential thing is the cooker, a
    pressure fryer.

    But she could introduce it to Italy, one of the few countries where they use
    Anchovies as an ingredient. And what is an Anchovy but condenses salt and "fishy
    taste" ;-)

    Anything would be better...the stuff is almost tasteless. Broasting is the
    only worth while thing done to KFC.

    Yes! I should try the KFC cooked in KFC, but we haven't KFC so I should cook
    KFC to taste once in a life your KFC 😄DDDD
