There's a shaker lemon pie that has quite a bit of lemon skin in it, but it
also has lemon pulp. A pie full or orange skins.... I don't know enough to
speculate but you could always make candied orange peel out of them.

It would be awfully sweet.. you'd need to candy them first

Yes. Is it possible that anyone would want to eat it? No. -aem

    Or zest and dry it.

I don't know. I was imagining some sort of marmalade [censored] - on a
shortbread crust perhaps? - and it sounds kind of appealing.

As long as you dont overdo it it should be fine. Avoid using the pith
though, ick. Some orange foods use just the segments, and some use
segments plus thin peeled skin. And of course a few even use thick
skin, but my experience with whole lemons put me off that (the pith is
    quite bitter)

Huh? Orange peels aren't sweet - candying them would make them sweet, though.
