UGH. My refrigerator is chock full of left over food from the holidays. Most of the Xmas food is gone but the 'tween Xmas and NY and all a lot of NY day food is left. I'm thinking about having a blah party and serving up left overs. I've got about 2 lbs of roasted top round, black eyed peas and hocks (a lot of it), various cheeses and spreads, a couple of pieces of rib roast, chicken and quite a bit off beef and chicken stock. Veggie wise I'll have to make some as none were left over. There is also a lot of crackers, chips and candy. Anyone care to join me in polishing off the holiday food?

I just used my leftover black-eyed peas and cornbread to make veggie burgers. I mashed up the beans with an egg and about a quarter cup of takeout salsa. I added enough crumbled cornbread to make the mix stiff enough to shape into patties. I browned the patties in olive oil. It was pretty good.
