Christmas Dinner

  1. I'm trying to balance a traditional Christmas dinner, with my kids, my
    hubby.......who is vegan........and me who is low carbing! Aaarrrrg
    nightmare!
    I know I'm going to have to make a range of dishes based around meat ( and
    the vegan protien equivalent). How is everyone else coping?
    What is everyone cooking?

  2. Phooey to cooking at Christmas. One of our daughters and her husband
    are coming to stay and we shall go to the local Ritz-Carlton for
    Christmas lunch. It's a buffet thing so everyone can have what they
    want.

    Turkey dinner, no problem. I'll skip the roast potatoes, eat everything
    else. I've bought some Splenda-sweetened cranberry sauce, there's a
    Christmas pud made from rhubarb in the freezer, along with some low-carb
    bread to make bread sauce, and some sausagemeat to make pork-and-apricot
    stuffing balls. Lots of veg, and ignore whatever carbs are in the gravy, and
    I'm set.

    What's traditional? T-bone steaks,
    cauliflower cooked with garlic, and a
    relish tray with cheese, olives, and raw
    veggies. SO and I are not picky.
    Pre-low carb days, we once had ham and
    bean soup with cornbread.

  5. Can't help out on the vegan part, but a traditional
    Thanksgiving/Christmas type dinner should be no problem on LC. Turkey
    and vegetables like cauliflower mashed, collard greens, green beans,
    turnips, squash and the like are already low carb. You can make
    wonderful cranberrry sauce by just adding one package of fresh
    cranberries to one cup water and the equivalent of one cup sugar. Add
    in the zest from an orange and you have cranberry sauce second to none.

    For stuffing, cook a couple slices of bacon. Then saute celery,
    mushrooms, (carrot and onion in moderation) in the fat. Chop the bacon
    and add back in. Add some chicken bullion, chopped parsley, a lot of
    bell's seasoning, and some low carb bread that has been left out for a
    day to dry out. Makes stuffing that is so good! But just be careful to
    keep the serving size under control.

    For desert, try pumpkin cheesecake. Make just like LC cheesecake, but
    add some pumpkin in!

  6. We've had a pizza party here for the last few years. The toppings are
    good, the teenagers love the pizza, and we have lots of LC snacks, along
    with the cookies, cakes, pies, etc. J&J pork rinds are some kind of
    wonderful IMO. I also like DaVinci Eggnog flavored syrup, which I still
    have tons of from a couple of years ago, add a bit of brandy and cream
    occasionally, and a lot once in awhile. Merry Christmas and Happy
