  1. I've got this weird snack craving, and all I can think of is potato soup.
    I've got milk, cream, butter, potatoes, leftover mashed potatoes from T-day
    (that really need to be used up), onions, celery, homemade stock, so..., why
    not soup? I just wish I had cheese!

    Tried and true recipes would be appreciated. Any ideas, folks? Doing a
    google on potato soup would be fruitless because there would be at least
    100,000 out there. Can anyone steer me in the right direction?

    Those mashed potatoes are 2 weeks old, I'd toss them, they must be nasty by
    now. I wouldn't use mashed potatoes beyond day 3.

    Here's a basic formula for a potato soup, it's really Rachael Ray's Corn and
    Crab Chowder, but the idea is flexible.

    I may start with rendering some diced bacon and use that for flavoring. I
    generally always skip the Old Bay because I don't like it, but I do add some
    thyme and a nice pinch of red pepper flakes. Or, make the basic recipe and
    add some sort of sausage near the end of cooking -- kielbasa or whatever, or
    ham or leave it without meat.. Use half and half instead of milk if you
    like.

    1 tablespoon vegetable oil or extra-virgin olive oil, 1 turn of the pan in a
    slow stream
    2 tablespoons butter
    2 all-purpose potatoes, peeled and diced
    2 ribs celery, chopped
    1 medium yellow onion, chopped
    1 small red bell pepper, seeded and diced
    1 bay leaf, fresh or dried
    Salt and freshly ground black pepper
    1 tablespoon Old Bay seasoning blend, found near seafood department or, on
    spice aisle in your market
    3 tablespoons all-purpose flour
    2 cups vegetable or chicken stock or broth
    1 quart whole milk
    3 cups corn kernels, scraped fresh from the cob or, frozen kernels
    8 ounces cooked lump crab meat, fresh is available in plastic tubs at many
    fish counters
    4 small bread boules, 6 inches, hollowed out, preferably sour dough,
    optional

    Toppings:
    Oyster crackers
    Hot cayenne pepper sauce
    Sliced scallions

    Heat a deep pot over moderate heat. Add oil and butter. As you chop your
    veggies, add them to the pot: potatoes, celery, onion, and red bell pepper.
    Add bay leaf to the pot. Season vegetables with salt and pepper and Old Bay
    seasoning. Sauté veggies 5 minutes, then sprinkle in flour. Cook flour 2
    minutes, stirring constantly. Stir in broth and combine. Stir in milk and
    combine. Bring soup up to a bubble. Add corn and crab meat and simmer soup 5
    minutes. Adjust the soup seasonings. Remove bay leaf. Ladle soup into bread
    bowls or soup bowls and top with oyster crackers, hot sauce and sliced
    scallions.

    Oh, you have everything you need ... do you have nutmeg? A little of that
    is nice ... a Little. Just heat it up, mixed together, serve with a pat of
    butter
    on top, you're good to go. Give it a buzz with a stick blender if you have
    one,
    just to incorporate the celery. Wish I had some.

    I used to go to this restaurant, they'd have cream of potato soup, yeah, it
    was cream of potato bud soup, you could tell. It was okay, but I'd tease
    them, I'll take the cream of leftover mashed potato mix soup.

    The celery, onions and garlic are a good start.
    I might add a bit of pepper is all. A dash of soy or worcestershire
    sauce for some depth too, but not much!!!

    Parsley leaf, or a bit of dill if you have it.

    No bacon eh? No ham, ham bone or any smoked meat products anywhere in
    the house?

    Any leftover turkey gravy?

    I've got smoked turkey and pork ribs......... I was considering the pork
    ribs. This house pretty much always has something smoked in it. My
    hillbilly husband is a BBQ freak. :~)

    Those mashed potatoes are 2 weeks old, I'd toss them, they must be

    Unless they were frozen.

    I wouldn't use mashed potatoes in cream of potato soup, anyway. I always
    finely dice russet potatoes and cook them in the stock until soft. First I
    brown 4 strips of bacon and set it aside; I saute onion and garlic in the
    drippings and add them to the stock with the potatoes. Bring it to a simmer
    and cook until the potatoes are soft. Stir in the cream and crumbled bacon
    and heat through. Taste and then add salt & pepper as needed (I like lots
    of pepper in my potato soup but I start off on the light side). Let the
    seasonings incorporate (low simmer, stirring the soup occasionally). Taste
    and adjust seasonings as needed. (I rarely add anything else to potato soup
    although some people might want to throw some herbs in there.)

    I wouldn't use smoked turkey in potato soup. I'd go for the ribs (trusting
    they don't have BBQ sauce slathered all over them).

    I've got smoked turkey and pork ribs......... I was considering the
    pork ribs. This house pretty much always has something smoked in
    it. My hillbilly husband is a BBQ freak. :~)

    I'd use whatever is "smokier".

    I wouldn't use smoked turkey in potato soup. I'd go for the ribs (trusting
    they don't have BBQ sauce slathered all over them).

    served on the side!!!!!!! I hate ribs drowned in sauce.
