    Irish Coffee

    Of course you can drizzle a little Bailey's over just about
    anything and make it taste good (even ice cream) but this
    terrific hot recipe uses Irish whiskey instead. A true
    belly-warmer.

    Irish Coffee

    1 1/2 oz Irish Whiskey
    1 Tbsp brown sugar
    2 oz heavy cream
    coffee
    float green creme de menthe

    Fill glass with hot water to pre-heat then empty. Pour piping
    hot coffee into warmed glass until it is about 3/4 full. Add
    1 tablespoon brown sugar and stir until completely dissolved.
    Blend in Irish Whiskey. Gently top with a collar of slightly
    whipped heavy cream by pouring gently over a spoon. Colour
    with cr=E8me de menthe and enjoy while piping hot.

    2 cups light brown sugar
    2/3 cup strong coffee
    1 tablespoon butter or margarine
    1 teaspoon vanilla extract
    1/2 cup nuts, optional

    Place sugar, coffee and butter in saucepan, and cook, stirring
    constantly, to 240 degrees, or to the softball stage. Remove
    from heat, add vanilla extract and cool, without stirring, to
    lukewarm (110 degrees). Beat until thick and creamy. Pour into
    buttered 8x8-inch pan and mark into squares.

    Coffee Souffle

    1 envelope of unflavored gelatin
    1/4 cup of milk
    3 eggs, separated
    1 3/4 cup of scalded milk
    2 Tbsp of instant coffee
    1/4 tsp of salt
    6 Tbsp of sugar
    1/2 tsp of vanilla

    Soften the gelatin in milk.
    Place the slightly beaten egg yolks in a saucepan and add milk slowly.
    Add the coffee, salt and 3 Tbsp of sugar and cook over low heat, stirring
    constantly, until the mixture coats a spoon.
    Add the gelatin and stir until dissolved.
    Chill until thickened.
    Beat the egg whites until foamy.
    Add the remaining sugar gradually and beat until stiff.
    Fold in the vanilla, then fold in the gelatin mixture.
    Pour into a mold rinsed with cold water and chill until firm.
    Garnish with whipped cream and shaved chocolate if desired.
    Makes 6 servings..

    1 cup granulated sugar
    1/2 cup instant coffee granules
    1/2 cup baking cocoa
    1 tsp almond flavor extract ( or cherry,or vanilla )

    Make your own international flavored coffee beverage

    Blend all together.
    Yield 2 cups mix.
    Store airtight.

    For 1 serving: place 2 heaping teaspoons into 6 oz hot water and stir
    well. Add some whipped cream and sprinkle with chopped almonds if
    desired.

    1 teaspoon ground cinnamon
    1 cup half-and-half or milk
    Whipped cream -- for garnish
    Ground cinnamon -- for garnish

    Process half of first 5 ingredients in a blender until smooth. Pour coffee
    mixture into a large pitcher. Repeat with remaining half of first 5
    ingredients, and pour into pitcher. Stir half-and-half into coffee
    mixture,
    and garnish, if desired. Serve immediately.

    Comments: For testing purposes only, we used Kahlua for coffee liqueur.
    This recipe yields about 8 cups.
