4 tablespoons unsalted butter
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup skim milk
2/3 cup Splenda -- or sugar
1/2 cup Egg Beaters® 99% egg substitute -- or 2 large eggs
3 cups frozen blueberries
TOPPING:
2 tablespoons sugar
1/4 teaspoon nutmeg
Heat oven to 350 degrees. Grease 8 or 9-inch square glass or nonstick
baking dish (not uncoated metal). Melt butter or margarine in saucepan;
let cool. Mix flour, baking powder and salt in large bowl. Whisk milk,
sugar and eggs into butter; stir into flour mixture. Stir in blueberries.
Spread batter in pan, sprinkle with sugar mixture. Bake 55-60 minutes
until pick inserted in center comes clean. Cool in pan 30 minutes before
serving.
