cheese dip

  1. I have tried just melting cheese in the microwave and using it on
    chips. The cheese hardens again. What is a simple cheese dip to make
    to keep the cheese soft?

    So far the only cheese I have tried is cheddar.

    You have to "cut" it with just about anything dairy - milk,
    sour cream, yogurt, cottage cheese. Heat your added ingredient
    too (and beat out the lumps if you so desire) for the mixing
    stage, so they don't shock the hot cheese into a lumpy mess.
    Get everything super hot, and blend. You might want to consider
    using a double boiler instead of the microwave. You don't need
    to run out and buy one, just a big pot and a stainless steel
    bowl or "stock pot" that fits inside of it will do the trick.

    Lots of people would scoff but yeah, Velveeta. There is also a "nacho
    cheese" dip you can buy, I think Frito-Lay makes it. It works.

    Wasn't there a bit of a fad/fashion/whatever in the '70s for a hot dip
    made of cheddar cheese baked with mayo? Maybe olives, too. I can sort of
    remember it out of the corner of my mind, but not recall it. Anyone
    remember that particular dip?

  6. My favorite cheese dip is simply to make. 1 lb velveeta, cubed; 1 can chili
    without beans, 1 small jar Pace pecante sauce. Mix and heat in microwave,
    stirring occusaly until hot. Serve with corn/tortilla chips, unsalted ones
    if you can get them. Also good with chips made from pita bread.

    I remember shredded cheddar mixed with mayo and green onions spread on
    baguette slices and baked. It puffs up. The cheese stays semi-soft and they
    are deklish.

  9. When I want real cheese, I order extra sharp cheddar from the Cabot Creamery
    in Vermont. IMHO, the best cheddar in the world. It does not make very good
    dip though. The texture of cheddar melted in a dip is not very good.

    Chile con Queso

    2 tbs butter
    1 tbs flour
    1 cup milk
    salt, pepper
    1 cup grated cheddar type cheese
    couple tbs chopped New Mexico chiles (roasted and peeled; canned or
    frozen works)
    additional chopped jalapeno

    Melt butter, blend in flour and cook for a minute or two. Add milk and
    bring to a boil stirring. Add chiles and seasoning. Take off the heat
    and add the grated cheese, mixing well. Cook over low heat until
    thickened.

    2 very good options:

    1. Melt some velveeta then start adding a little milk and more cheese and
    whatever else strikes your fancy.
    2. Make a thin Béchamel and start adding cheese + + +, a little mustard
    powder does well here too.

    Rotel dip:

    Take one block of Velveeta and one can of Rotel tomatoes. Slowly heat
    it all together on top of the stove or in the microwave, stirring when
    you remember to, until the Velveeta is melted.

  15. Have you tried making a white sauce?? After you make the white sauce,
    grate the cheese in it, stir till melted, do not bring to a boil
    again.

    I usually make a cheese sauce this way, and it works pretty well.

    We were all about nacho cheese dip & tacos in the 70s - don't remember
    anything like what you describe. I've had a cream cheese/jalapeno hot
    dip lately....

    Absolutely. Read the label. It says "cheese food product".

    So if I ever move out into the country and buy a cheese
    ranch, I know that the baby cheese wheels get fed bales
    of Velveeta. ;^)

  20. Cute-poet-chick makes something she calls "snappy cheese" -- grated
    sharp cheddar (maybe a half pound?), a bit of mayo (just enough to
    moisten), a tiny bit (less than a teaspoon) of grated onion, and some
    Tabasco. Let it sit in the fridge for a while, and then as weird as it
    sounds, it's delicious. I love it on Triscuits or Fritos scoops.
