Don't. They don't mix worth a flip! It was tasty but not smooth at all.

I let it get to room temperature and whip in in the food processor; it whips well and gets fluffy and smooth; I did the same thing when I made cream cheese pancakes yesterday 🙂.

I got it soft in the m-wave but when I added it to the ice cold jello, it chunked back up again.

You need to soften the cream cheese first. Run it through a processor or mix it with an electric mixer. After the cheese is whipped, incorporating other stuff is actually pretty easy.
Or sugar-free pudding. Both of these things make good frosting for LC baked goods.

I did soften it, but I did not whip it. I added the warm, softened cream cheese to ice cold jello. ;-) That was the mistake I made, thanks!

Let me make sure I've got this right. You're mixing the sf pudding mix (dry and unprepared?) with the cream cheese? Or, you're making the pudding first and then mixing it w/ the cream cheese?
I'm not sure I can afford the calories right now, but one of the vendors at the local farmers' markets makes a religious experience quality of mascarpone and I think that might make a really nice substitute for the cc.

I've made cheesecake-like deserts by mixing whipped, softened cream cheese with un-set jello. It's quite good, and the texture is fine.
Cool idea! I've not tried using unset Jello.

The problem with that stuff is it tends to have more fillers.
