  1. What is your favorite Chicken rcp?
    My friend just found out she is diabetic and is trying low-carb
    well in proud support of my previously anti low-carb friend I'm
    putting together a "cook book " for her and she loves chicken,
    also I'm not a big Chicken fan but want to get into eating
    it. I thought I might get some ideas from yours.

  2. This is my all time favorite, the sauce is delicious, I used to eat it on
    rice and SO still does but it is good just on the chicken or on other
    vegetables. I am more generous with the ginger and really don't measure
    carefully. I usually have a larger chicken than the one in the recipe so
    often double everything else.

    SAVORY CHICKEN

    One 2-1/2 to 3 lb chicken, cut into parts
    1-1/2 cups water
    1/2 cup soy sauce 10g carb
    2 T dry sherry ? carbs
    1 med onion, cut in strips 7g net
    1 cup sliced mushrooms (2 g/cup)
    2 cloves garlic, crushed 2g
    2 T thin slices ginger 2 g

    Brown chicken in oil. Add onions, garlic and ginger and fry 2 minutes.
    Add other ingredients and simmer, covered, for 40
    minutes. Thicken with guar gum or similar item.

    Total ~23 g carb.

    You have a very smart friend. Chicken is my favourite thing to eat.

    I have a few good recipes I will post for you at a later time.
    My oldest son is breathing down my neck right now wanting the computer
    for his video games and being the weekend it might be a while before I
    get possession of my computer.

  4. Artichoke Chicken

    3-4 Boneless skinless breasts

    1 cup cream of chicken soup

    ½ cup mayo

    1 jar artichokes

    1 tbs lemon juice

    1 tsp curry

    ½ cup cheese

    Put artichokes in pan, place chicken on top. Mix everything else, but the
    cheese and pour over. Top with cheese.
    Bake 1 hour at 350.

    milk or water?? Sounds good!

    One of my favorites is to put boneless skinless chicken breasts in a
    zip lock in the refrigerator to marinate for 12-24 hours (at least 12
    hours for the best flavor) with enough picante sauce to cover them and
    a couple of sprinkles of cayenne pepper. Maybe a dash or two of
    garlic in the bag as well.

    To cook, I wrap them in foil (completely covering them to keep in
    moistness) and bake at 375 degrees for 23-25 minutes.

    Let rest for a few minutes, then slice up to use for snacking, salads,
    etc.

    I tend to use the slices in a salad with a bit of ranch dressing and
    salsa mixed up as the dressing with some cheddar cheese, diced
    tomatoes, sour cream, olives, etc.

  11. I just printed out Atkins recipe for chicken cordon blue. since it has a
    fried coating of almonds, parmesan and bake mix- it should be interesting.
    go to www.atkins.com look for recipes.

    6 Boneless/skinless chicken breast halves, cubed
    1 small Onion, quartered
    3 cloves Garlic, minced
    1 T Sweet curry powder
    1/2 C Heavy cream
    3 T Olive oil

    Heat the olive oil in a skillet. Add the onions and garlic, cook until
    clear. Add the chicken, cook until browned. Stir in the sweet curry
    powder until well blended. Stir in the heavy cream until blended. Cook
    over medium heat until slightly thickened-about 3 minutes.

    *3 servings yield 528 cal, 35g fat, 5.242g carb, 3.141g fiber for a
    total of 2.101g net carbs and 46g protein.*
