Egg salad

  1. I had a hankering for egg salad yesterday when I was out and about, and I
    almost bought some at the grocery store deli until I read the ingredients
    and saw high fructose corn syrup. Even though it was way down on the list
    and the carb count was still low, I was all "Fugghetaboutit" and I made my
    own today instead. It's such a simple thing to make, and I only use eggs,
    mayo, and dill relish, but I'd forgotten how good and filling it is. I
    think next time I'll try wrapping it up in a slice of ham . . . mmm.

    I have only 3 flaws. My first flaw is thinking that I only have 3 flaws.

  2. I just checked on Fitday, and it say's Tuna Salad is 20 grams of carb's per
    cup, and egg salad is 3 grams of carbs. If that's right,,why is it O.K. to
    eat tuna salad? I make mine with Mayo, pepper, small amt. of red onion &
    celery.
    Am I reading this wrong? Thanks for your help.

  3. I used a couple boiled eggs with miraclewhip and a little mustard. I cut a
    tomato or 2 in half and scoop out the inside. I then fill it with egg salad
    mix. If you wish you can top it off with some cheddar cheese.

    i didn't look at fitday, i don't use it - but i can't see how that's right.
    i make mine like yours only i use tuna in oil and i add a bit of vinegar
    (sometimes) and use white onion. I don't see what adds up to 20 g though!

  5. I think Fitday must be figuring it with Miracle Whip and sweet pickles
    which is how some people make it, yucky, otherwise it couldn't be 20
    grams of carb.

    You do know that Miracle Whip is quite carby, don't you. If you must
    have your egg salad sweetened, use regular mayo and add something sweet,
    either a packet of Splenda or some pickle relish sweetened with Splenda.

    Egg salad is pretty good, hell eggs are damn near a perfect food.
    Just had some the other day, made my own mayo with some added rosemary
    from my herb garden and a little diced dill pickle. Pretty good eating
    along with a healthy dose of thin sliced roasted beast.

    If you click on ingredients when you have FitDay displaying tuna salad
    you will see that it includes regular mayo, sweet pickles, and onions.
    These are all fairly high carb. That "cup" they quote, equals 207 grams,
    a pretty large cup.

    Ok, mustard, yes. I will try that. Salt . . . well, I don't think it needs
    to be any saltier, and I'm actually trying to get used to eating foods
    without adding extra salt. Pepper now, actually that gives me an idea . .
    .. I wonder how it would be with some basil in it? And don't the bacon bits
    get soggy?

    Your egg salad comes premade I guess? The groceries here in the NE all
    make it fresh and sell it by the pound. Eggs and mayo is about all you need.
    I like to add onion and maybe celery.

    Hi Sandy,
    You can see the ingredients of the tuna salad on fitday. They calculate it
    with sweet pickle relish and a sweeter mayo which makes it go to 20g of
    carbs. Just do your own measurements and customize the food. Simple,
    that's what I do.

    If you like relish in egg, tuna or ham salad, check out Mount Olive sweet
    relish. Made with Splenda. Their bread and butter pickles are great,
    too, although a tad less crunchy than the regular kind.

    Hi David,
    I don't mean to be nit-picky here but there is different kinds of mayo on
    fitday. One is listed as "mayonaisse, regular" which barely has carbs, and
    the other (which is the same as the one listed in the tuna salad) is a
    "mayonaisse-type salad dressing" which of course is different from regular
    mayo, has sugar in it and it, and is accurately listed with more carbs that
    the usual mayo.
    Just wanted to point that out.

    You might be able to abide them if you dip them in something, like egg
    salad. I don't like the plain rinds at all, but when dipped they become
    okay.
