I had a hankering for egg salad yesterday when I was out and about, and I
almost bought some at the grocery store deli until I read the ingredients
and saw high fructose corn syrup. Even though it was way down on the list
and the carb count was still low, I was all "Fugghetaboutit" and I made my
own today instead. It's such a simple thing to make, and I only use eggs,
mayo, and dill relish, but I'd forgotten how good and filling it is. I
think next time I'll try wrapping it up in a slice of ham . . . mmm.

try mayo, a dollup of mustard, salt, pepper and crispy bacon bits! YUMMY!!!

Ok, mustard, yes. I will try that. Salt . . . well, I don't think it needs
to be any saltier, and I'm actually trying to get used to eating foods
without adding extra salt. Pepper now, actually that gives me an idea . .
. I wonder how it would be with some basil in it? And don't the bacon bits
    get soggy?

Heck no. I dont know about you but I make enough for a meal. I snarf
deviled eggs like a vaccuum LOL. I hate soggy bacon too. I dont like
predone deviled eggs anyway because they get wet and sweaty ICK!!!!!

I have only 3 flaws. My first flaw is thinking that I only have 3 flaws.

I like to add a couple small slices of finely chopped jalopena peppers. It
isn't hot but gives it a nice tiny little bite.

You might be able to abide them if you dip them in something, like egg
salad. I don't like the plain rinds at all, but when dipped they become
    okay.

no one on the face of the planet needs to devise a method for making
pork rinds more palatable. they are not a necessary food. if someone
doesn't like them, they just don't need to eat them.

Of course not, but the concept still valid. And in some cases it can work
to a person's advantage to make certain foods palatable.

If you like relish in egg, tuna or ham salad, check out Mount Olive sweet
relish. Made with Splenda. Their bread and butter pickles are great,
too, although a tad less crunchy than the regular kind.

  10. Yes Roger - I know what pork rinds are and I've eaten enough of them
in my lifetime to reconstruct several large hogs. They're a snack
food. They're loaded with sodium. They very easy to overeat - and for
anybody who needs to keep the calorie load in check - they're an
unwise food choice. Please don't even attempt to tell me that low-carb
is not about calories - been there - done that. I'm not trying to be

don't have to find a way to make them taste better. They aren't
    mandatory.

dude, they're JUNK FOOD. yes, they're low carb but so what? they're
    STILL JUNK FOOD.

Don't worry about me telling you that LC is not about calories, it most
definitely is. One can easily measure rinds just like any other food and
hence include them in a LC WOE. IME, rinds are a lot less easy to overeat
than are things like nuts. And rinds have plenty of protein and are
virtually zero carbs. Sodium is not a problem for everyone.

Plenty of foods can be snack foods. Anything one chooses to snack on is a
snack food. Rinds can be made part of a LC WOE and are not just for
    snacking.

    I'm not
    || trying to be confrontational - I'm just saying that if you don't

    || They aren't mandatory.

Nothing is mandatory and no one said they were. However, variety in a diet
is worth something, and having multiple options is a good thing. Some
people don't like broccoli, but finding ways to make it palatable is worth
the effort. For me, I eat it raw and sometimes dip it in ranch dressing. I
don't like plain pork rinds, but when dipped in something they become
palatable to me. Others may find the same is true for them.

If you don't like them, then don't eat them. The same goes for anyone. But
pointing out LC options to people is part of what this newsgroup is about.

If the skin from chicken and so on is supposed to be good, so should
the skin from pigs. That's what a pork rind is, pig skin sliced
thin enough to be easy to eat then fried enough to be crispy not
    chewy.

    Quoted message said:

    || dude, they're JUNK FOOD. yes, they're low carb but so what? they're
    || STILL JUNK FOOD.

    Prove it.

Depends on how you define junk food, so I will offer a definition
that fits: If a food only has one type of macronutrient then it
is probably a junk food. If a food is nearly devoid of vitamins
then it is probably a junk food. It's not a particularly good
definition, but accept it and pork rinds are junk food.

Pork rinds are from an animal so they are so low in carbs it
would take fancy instruments to detect the amounts. Pork rinds
are fried in very hot oil and heated while they are drained. As
a result nearly all of the oil is removed, and they end up maybe
even qualifying as low fat. So as far as the three types of
macronutrient are concerned, pork rinds are almost pure protein.
Pork rinds have also been fried enough to destroy most of all of
the vitamins and soaked enough to remove most or all of the trace
    minerals.

Calling a food that is almost pure protein a junk food is definitely
an extremist stance, but it isn't completely without justification.

How many low carb plans are high protein, though? Protein Power
for example. The body can only handle about 40% protein calories,
so you wouldn't want to make pork rinds a major part of your diet.
No one that I know of endorses them as anything but a snack food
    though.

Personally, I can't overeat pork rinds. The first few taste okay
to me but as I eat more they build up some sort of cloying effect
and I like them less and less. I burn out on them before the end
of one of those small sacks I see in snack assortments. I am sure
others can overeat them, but no one should over eat anything. In
the case of pork rinds, I'm glad I have another food I can have
with no danger whatsoever because I can't overeat them.
