Parmesan Cheese

  1. I love Parmesan cheese and love the Parmigiano-Reggiano wedges. What is the
    best way to store this? It always gets moldy before I finish using up the
    wedge.

  2. Grate it and freeze it in ziploc freezer bags.

    Take out what you need... it thaws in a jiff and if you're melting it,
    you don't have to wait to thaw it.

    Cut Parmesan cheese gets a "bloom" on it that looks like mold but
    isn't. It's usually whitish and rubs off with a push from a finger.
    Don't worry about it. Put the wedge into a zipper bag and store it in
    your fridge in the meat drawer or crisper.

    Grate it when you need it. I wouldn't grate it in advance or freeze
    it. You'll notice a change in the final flavor and texture in either case.

    If you get any appreciable green mold, it likely isn't the real thing.
    A little bit here and there is natural. The cheese has live bacteria
    and other critters in it. They're all perfectly fine to consume and
    add to the sharpness of flavor. If you'd rather not, scrape the wedge
    with the back of a paring knife.

    LOL! Probably not such a bad idea. I love the stuff! I used a lot more of
    it when I ate pasta. Now I grate it over soup and veggies. Anyone have any
    other suggestions or recipes?

    on the package not to refrigerate. I wonder what they do to keep that
    already grated when you buy it stuff from getting moldy.

    I usually do scrape off the whitish stuff. It's the green stuff that
    bothers me.

    This is what I've always heard and why I've never frozen cheese (any
    kind)before. Wait a minute, yes I have. I usually make five sandwiches for
    my hubby on Monday morning. He takes one to work and I freeze the other
    four for the rest of the week. I'll have to ask him if he notices any
    difference in the taste or texture of the cheese. Or maybe I won't...he
    hasn't complained. Does it change nutritionally if it's frozen?

  12. I think they're talking about parmasan cheese that they get from cheese
    counters. I didn't know better until I bought some from the cheese counter: the
    real stuff taste fruity, unlike the Kraft stuff you get in a paper tube.

    Think about the days before refrigeration. How did they do it then?
    Cheeses have always been around, and without refrigeration they grow moldy
    even more easily. My mom told me how it is done. Take a paper towel
    (used to be a cheesecloth) and saturate it with plain white vinegar.
    Squeeze it out, then wrap the cheese in it. Then put it in a plastic bag
    (used to be a crock) and it will keep a long, long time without affecting
    the flavor and it won't grow moldy.

    Amazing how some of these old ways have been forgotten, but it still works
    well. We are just 2 people, so a wedge of cheese can last a while around
    here. But the vinegar cloth works its magic today like it always did.

    I just keep the whole wedge in a ziploc bag in the fridge and it has never
    molded! My family did it this way (well, plastic wrap before ziploc bags!)
    for the last 30 years and never had a problem - the cheese just dries oout
    but remains fine. I grate it directly on the food, or for a recipe I do it
    righ before i need it. ( i dunno what they did before that, i wasn't
    around!!)

    If you grate it and store it you will have very dry cheese I think.

    Parmesan-Reggiano is so good it won't be around long anyway!!

    Also - don't buy the tubes of mystery cheese.

  15. Thanks for this. I'll be using the vinegar technique regularly. I have
    lost half of my cheeses since January due to mold. I get nauseous just
    seeing it, so I toss the wedge. I couldn't possibly scrape the ick and eat
    it.

    I had heard of cheese cloth. It never occurred to me that it was used to
    store unrefrigerated cheese.

    A good cheese knife is all I need to eat parmesan...
    (Though a glass of red wine makes a nice addition.)

    I agree that the mold is not a problem - pare it off and use the rest.
    However, the obvious answer to me is to buy a smaller piece if you can.

    Definitely. If you grate it and freeze it, you may as well buy the fake stuff.

    Better to shave it than grate it, IMO. Great on top of salads and on hot food.

    I have found the A Tilia Food Saver to be the best way to store cheese.
