Cheeses have always been around, and without refrigeration they grow moldy
even more easily. My mom told me how it is done. Take a paper towel
(used to be a cheesecloth) and saturate it with plain white vinegar.
Squeeze it out, then wrap the cheese in it. Then put it in a plastic bag
(used to be a crock) and it will keep a long, long time without affecting
the flavor and it won't grow moldy.Amazing how some of these old ways have been forgotten, but it still works
well. We are just 2 people, so a wedge of cheese can last a while around
here. But the vinegar cloth works its magic today like it always did.
That sounds like a great idea! Why haven't I ever heard of it before?

Alternative suggestion: Freeze it, grate it when you need it. Presuming
some sort of powered grater: I've never grated frozen parmesan by hand.
Our Kitchenaid grates frozen parmesan into a light fluffy powder.
It will be harder, but not impossible, to thwack off nibbleable lumps.

If you don't want to freeze - you could invest in a vacuum bag sealer (like
foodsaver). Take out what you want - vacuum seal the bag - lasts much
longer. I've got my money's worth from mine. Freeze burgers, pork chops,
chicken (watch out for sharp edges on bones). I still have some fresh
strawberries in the freezer (from our strawberry gestival in April). NO
freezer burn.

I buy cheese at Sam's. I also bought a food processor. According to
instructions, I can partially freeze the bulk cheese and shred it through
the processor, and it saves a lot of money.
Freezing it works. Parmeson cheese I also buy at Sam's, and it keeps for a
long time in my cupboard. But I use it often.

I know US people dread mould, but actually mould is normal for cheese.
Just scrape it off and eat what's underneath.... Ditto with bread. It
won't hurt you.
