I've been quite happy with the beam from my existing front lamp (when the bottle isn't misaligned by half a millimetre, slipping in the wet, going flat on one side, refusing to turn at all because the bearings have failed, or just arbitrarily losing connection) and could happily avoid paying for a fancy new lamp if I can find a weatherproof three amp off-switch.

You could weatherproof a normal toggle switch.
You can get the automatic shimano switch - but that is around a tenner and quite big.
But I hope somebody else gives a more sensible answer because I'd be vaguely interested too.

Juliette's Shimano Nexus dynohub came with an automatic switch - it can be switched off or no manually but is normally left in the 'auto' setting where a photodetector automatically switches the lights on when the ambient light gets dim. Like I say this was part of the dynohub package, it did not come with the headlamp.

Since I've already got the wheel (not the Nexus, the other one: Ultegra?) it's a bit late, but I don't think my LBS would have thrown this in anyway. A switch that I can mount somewhere near the handlebars would be useful too: the forks are a long way down from a 25" frame.

probably buried in the website 😉 but it's a separate part. Not that you want one IMHO because these switches are filled with SMD trickery with a mind of there own. --- Marten Gerritsen

If you get the Shimano Nexus hub it somes with an auto switch. If you buy the SON you can keep your existing light as a secondary and make up a 12V system, which is brilliant - you'd still need a switch thobut; I used the rubber waterproof handlebar switch from a VistaLite rechargeable lighting set, which is available as a spare part by special order (your LBS should be able to get this).

I too have suffered with the same bottle dynamo problems and have arrived at the same solution. I now have a SON driving the original lamp set through a push-button switch bought for just over a pound in B&Q or HomeBase. The switch is mounted on the pannier rack as there is a handy flat platform on the top and bits of rubber glove have been lovingly attached with cable ties to make a waterproof coat. The wiring gets a bit messy 'cause you have to go from the SON hub at the front all the way to the rack mounted switch and then back again to control the front lamp. The rear lamp isn't a problem of course.
