Yesterday's mac and cheese

  1. I've got about 4 cups of leftover mac and cheese from yesterday. I made it
    with stout penne cooked al dente and nice, aged white cheddar. I'm thinking
    of giving it new life by adding a can of diced tomatoes, some diced peppers
    and onions, maybe some mushrooms. What do you think? Will this work out?
    Or am I flogging a dead leftover? Any other ideas? I'm just not in the
    mood for leftover mac and cheese.

    Peppers and onions are fine IMHO tomatoes don't work well with Mac & Cheese.
    Celery is ok too. I would sauté the vegetables and any left over meat - add the
    Mac & cheese and heat.

    The kids like leftover M&C ice cold with canned peaches. Odd, I know,
    but teens can be that way.

    I think it may be hard to "mix" in all the ingredients you mention to
    get a homogenous mass, but I bet a pour-over of the tomatoes, onion,
    etc, would be nice.

    My usual additions are not very imaginative, but they taste good. -aem

    Tricking up Mac 'n Cheese I: can of tuna, drained, + chopped
    scallions.

    Tricking up Mac 'n Cheese II: diced ham + peas + chopped parsley.

    Drain the tomatoes well and mix them in. Slice up some link sausage
    medallions, brown them up nicely with your onions, peppers and mushrooms
    and then mix them in, it will be good.

    I like to add sliced onions and some sliced mushrooms...mix them in well
    and then lay several strips of bacon on top...Bake it till the bacon is
    crisp the top gets crunchy around about 325-350F. The bacon grease adds a
    nice flavour and the onions make it a little sweet tasting. And the
    mushrooms I add cause I like mushrooms.

    Peppers and onions are fine IMHO tomatoes don't work well with Mac &

    What a combo! Teenagers are wonderful - leftovers hardly ever make it to
    the next meal.
    I think I'll get the extras warmed up in the pan and drop pieces of the m&c
    over the warm stuff and stir until warm.

    That sounds great. I'll go rummage in the deep freeze, I may have some sort

    Has anybody ever tried slicing and frying? It works for polenta, grits,
    sweet potatoes, and lots of other things...

    BTW, if you like hot sauces, try your faves with the M&C.

    Agreed. I can't imagine a *GOOD* mac n' cheese needing "new life".

    Yesterdat a friend of mine told me about a mac and cheese she used to
    make that sounded more like a potatoe dish, because it had ham in it.

    Add all that, mix in a couple of beaten eggs and some pitted olives, and
    cook it in a frying pan with oil, then if you're brave flip it,
    otherwise under the broiler and have a frittata
