Actually other sports you do see it occasionally, Michael Jordan (the basketball player) was famous for doing that, and doing it a lot. Why they do it? I don't have a clue. I think it's a subconscious thing during extreme physical/mental processing; my wife does it when she's trying to do some sort of physical thing and doesn't realize she's doing it unless you mention it. I knew a lot of people when I use to race a few thousand years ago that never did that and nor did I, so I think it's something that some do it and some don't.

Must be a physical thing - if I stick my tongue out I find it harder to breathe but maybe it helps some. I have a deviated septum so rely more on breathing through my mouth than through my nostrils. Dogs use it to cool down by excreteing sweat through the tongue. Thankfully, humans don't!
