I usually marinate the chicken in a sauce I make as follows:
Some kind of spice mixed with a little canola oil and white vinegar.
Sometimes I use a prepared spice mix, but it's easy to mix one up, out
of something like paprika, dried oregano, garlic powder, a little
ginger, or chili powder. Obviously, I wouldn't use all of these in the
same marinade.
Or you could just marinate in some kind of vinaigrette.
