Who needs another taco salad?

  1. Not I, said the Little Red Hen, because I have the best one going. Just
    finished whipping up a batch for the next few hot nights and thought I'd
    pass it on:

    FELICE'S VERSION OF MADDY'S TACO SALAD

    12 ounces ground chuck, browned with
    1 teaspoon chili power
    1 teaspoon ground cumin
    1/2 white onion, minced

    1 10-ounce can kidney beans, rinsed and drained
    1 medium red onion, chopped
    4 ounces sharp Cheddar, diced
    2 tomatoes, cored and diced
    1 avocado, diced
    1 small can sliced black olives, rinsed and drained
    chopped fresh cilantro to taste
    Thousand Island dressing to taste

    Direction? You need directions? Toss everything together and serve with
    tortilla chips in or on the side, or in a tortilla basket, or over lettuce,
    or whatever whets your appetite.

    Anyone else include other stuff in theirs? I'm open to variations.

    Sounds yummy! Here's my taco salad

    Brown ground beef then drain. Add 1 - 2 c water and taco seasoning.
    Allow to boil down. In the meantime: chop one onion finely, chop tomato
    into bite size pieces, shredded lettuce, shred cheddar cheese.

    Besides this you will need: sliced green olives or black is good too,
    hot sauce, homemade or storebought salsa sauce, sour cream, either soft
    taco shells or tortilla chips

    To assemble: Scoop seasoned ground beef onto plate, top with salsa
    sauce, lettuce, tomatoes, onions, then whatever other toppings you want.
    Personally I just eat it with a fork with no chips or shells. It's a
    great camp recipe and one that I make fairly often.
