White Chili

  1. My recipe is a simple one, and I use my crock pot. You can
    also soak your beans overnight, use canned ( 🙁 ), or if you
    don't want to do that, just add washed beans to the
    crockpot, and cook on "high".

    White Chili

    1-1 1/2 cups of Northern Beans 1-2 pounds of boneless,
    skinless chicken breast 2 cans of chicken broth 1 medium
    onion, chopped 1 packet of "white chili" chicken mix ( I get
    mine at Wal-Mart) 1 can of diced tomatoes Red Pepper Flakes,
    to taste 2-3 cloves of roasted minced garlic Garlic powder
    to taste Salt and Pepper to taste 1 package of frozen mixed
    vegetables

    I am sorry that I do not give "exact" measurements, but I
    never have. I cook by "feel" so to speak. To start the dish,
    and it is a very simple and satisfying one, take your
    chicken breast, wash them well under cold water, removing
    any excess fat, and then cut into bite size chunks. Cook the
    chicken and 1 can of chicken broth over a medium high heat
    until the chicken is no longer pink, and add your seasonings
    as well. While the chicken is cooking, you can chop up your
    medium onion, and add all the remaining ingredients, minus
    the frozen vegetables, into a two quart crockpot. Once all
    the ingredients are in the crock, including the cooked
    chicken with broth, turn the crock on "high" for 5-6 hours
    if you are adding dry northern beans to the mixture. If you
    are using canned, or have soaked your beans overnight, then
    of course, you can cook for less time or at a lower setting.
    Add the frozen vegetables to the white chili an hour or two
    before serving time, giving them time to heat through and
    not be too mushy.

    This makes a very hearty stew, but if at the end of cooking
    you desire a thicker consistency, take a table spoon or two
    of cornstarch and stir into a cup of COLD water. Mix
    thoroughly, and add to the cooking chili. This will thicken
    it up immediately. I like to have a nice green salad, and
    some Parmesan Cheese Bread with this meal, and it is
    especially good on cold days. Enjoy.
