Which low carb plan are you following? In many of them it isn't necessary
to give up cheese - I'm not sure what "white cheese" is but the harder, aged
cheeses are about 1g/oz. of carbs. (It doesn't sound like you're in the
US - although your English is quite good - I think an ounce is about 28g?)
Most folks find that their blood lipids improve greatly when eating low
carb; we can eat much more in the way of fats, as it isn't the dietary fats
that solely raise your levels. Olive oil is considered to be one of the
so-called "good fats" by most, however.
I would respectfully suggest that you get a good book on whichever of the
low carb plans interest you and learn about fats, dairy foods, etc. and
where it all fits in to a low carb lifestyle.
