What can I do with?

  1. a few leeks, several pounds of fresh garden tomatoes and several fresh
    yellow, orange, red and green peppers?
    In the freezer I have chicken, pork chops, chopped meat and a roast (however
    it's a little to hot here to make a roast today)
    Any ideas? I"m in the mood for something new but out of ideas.

    Man oh man, you've the makings of a great chicken dish.

    Slice the leeks thinly. Cut some peppers into thin strips. Melt some
    butter with some EVOO in a frying pan. Saute lightly the leeks and
    peppers. Add some chopped garlic if you have it. When they've softened,
    add the chicken (sectioned if it's not already) that's been lightly
    floured. Brown the chicken off. Add a bunch of chopped tomatoes, some
    basil (and oregano if you wish). Got any white wine? Or chicken stock?
    Add a glassful. Cover and simmer until the chicken is done.

    Serve with a bit of salad if you have any. And some sexy crusty bread.

    Aside from grilling, I'd make a huge pot of soup (at least the oven
    wouldn't be involved). Partially thaw some pork chops and cut in slivers,
    slice the leeks, and peppers. Stir-fry the pork, leeks, and peppers and
    toss into a soup pot. Peel and coarsely chop the tomatoes and add to the
    pot. You could forego the basil and oregano and make an Asian flavored
    broth if you have sesami oil, tamari or soy sauce, chicken broth (canned is
    okay), maybe some ginger. OR, you could use some of the basil and oregano
    along with chicken broth. Just a thought...

    If you peel and core the tomatoes then add a pit of peppers, leeks, and
    basil you could make a nice pasta sauce. Chicken would likely go nicely
    with it too.

    or

    You could add the above sans pasta and use as a sauce for fried chicken.

    Man, this is an easy one! :-)
    Just make an Italian Chicken recipe... You could also smother the pork
    chops in a fresh sauce.

    Blanch however many tomatoes you want to use and peel them.

    To blanch and peel fresh tomatoes, bring a pot of water to a boil.
    Lower the tomato into the pot using a slotted spoon. Roll it around a
    bit for 15 to 20 seconds. Remove it and run right away under cold tap
    water. The skin pulls off easily and it literally takes seconds to peel
    a tomato this way!

    Chop them coarsly, add shopped peppers and minced basil, Oregano, garlic
    and some black pepper. Simmer for a bit to reduce, then add the meat.
    Cook until done on a medium heat for slow cooking.

    QED. :-)

    Serve over pasta or rice if you want, or just by itself.

    I've got some pasta sauce makings and lots of fresh herbs in the herb
    garden. This weekend's plans are to make a fresh sauce, then serve with
    chicken italian sausage and some sliced grilled boneless skinless
    chicken thigh over some baked and rinsed spagetti squash to keep it all
    low carb. ;-)

    Except tomatoes are not that low carb. <sigh>

    All the chicken ideas sounded great.

    If you get down to having just tomatoes, peel, seed and chop a few.
    Throw into a pan with a tablespoon of butter and half a peeled onion
    (not chopped, just big). Simmer gently for 20 minutes. Take out the
    onion and eat or discard. Season w/ salt & pepper and add chopped basil
    (though you really don't need it, this is glorious on its own). Serve
    over pasta. 3 or 4 tomatoes would be enough for 2, I'd say.

    They are calling to be roasted in the oven (with oil and green herbs)
    and served with pasta, couscous or alone as a salad/side with meat
    (lamb?). Or make a ratatouille./
