Depends of a few things such as...
- Build quality of wheel
- Rim being used
- Tire pressure rating
- Weight of rider
- Conditions of roads
- Build quality of wheel

Don't forget casing stiffness. Everything else being equal, a flexible tire will be more prone to pinch flats.

The weight of the rider would be around 315. I am 205 and the tires I have seem to have no problems whatsoever. I was just wondering if a tire with pressure of 100 max psi would be okay? I've seen others that go up to 125...I am not sure what would be better.

As Morbius mentioned, I think the biggest question mark is whether or not the wheels can support the weight.
