I answered my own question - I wasn't thinking simple enough!

I will bring shrimp on skewers to grill. Maybe with an optional glaze.

How does that sound? (i'm still up for suggestions!)

Sounds good... also a meat/cheese/creamy dip combo is often quite
    popular.

Got a recipe? Do you mean like a mexican 7-layer dip?

    Unfortunately I don't. I usually take cakes/breads/cookies to potluck
type things and just don't eat them <grin>

Smoked salmon and cream cheese roll-ups (spread softened cream cheese on smoked
salmon, roll up, slice into small rounds). You might bring along some RyKrisp
(sp?) or other whole grain crackers to set along for those who think this
    requires crackers.

I thought of this too but I don't know if *I* like them! never tried them!
(i don't eat mayo or mustard so they always grossed me out- i would try them
    now though)

Also - it's a backyard BBQ so I don't think eggs sitting in the sun is the
    best idea 🙁

Well to keep it simple, surely veggies and dip are always in order, and no
one thinks of them as specifically "diet food".

Chicken Satay - white meat chicken on a skewer with a peanut/teriyaki/garlic/ginger glaze.

I think you can do the same thing with pork tenderloin.
