I'd like to convert my cannondale R2000 from a double to a triple. Can
anyone tell me what components I need to replace besides the crankset? Just
the front derailuer?

What components does it have now? You'll probably need a new bottom bracket.
Some shifters can handle double and triple, some not. You may need a triple
rear derailleur as well.
Pardon my ignorance - it's all ultegra with the integrated brake/shifters
(sti?). The bike is about 4 years old.

Not sure when Shimano made their brifters double/triple compatible, so you
may need to replace the left one so that the FD throw will be enough.
You'll need a new FD - triple [long tail] to cover the throw from the inner
granny to the outer ring. You'll also need a new BB [118.5mm v. 109.5mm],
and a new crankset. Your current RD will be just fine.
If you know the "model year" for your current group, then the question of
the new brifter[s] will be easily resolved.

Your front shifter is probably fine. Disconnect it and shift all the way up
(little lever). Now see how many clicks you have on the way down (big
lever). If its 3 big ones (plus an extra little one in the middle), you're
all set.
You'll probably need that new rear derailer, or you won't have enough chain
wrap to handle an accidental shift into granny/small sprocket, which can be
dangerous.
And while you're at it, evaluate what kind of gears you really want, which
will determine what crankset you end up with. I find the stock 52-42-30 of
Shimano triples to be too high, so you may want to look into models that
come with 50-40-30, or 110 BCD cranksets that can give you a middle ring
below 38. Check out www.rivbike.com, or www.harriscyclery.net, or
www.peterwhitecycles.com. I believe Nashbar even sells a generic 110
crankset.

Likely the bottom bracket and longer chain. Assumes that your
shifters can shift a triple.
