You cannot know for sure until you've bought a couple and tried it.
However, if the man at the bike shop says it, and is willing to exchange
the tyres if they don't fit, there is no risk to you in acquiring this
knowledge.

That level of pressure in such a fat tyre is unnecessary, possibly harmful
to your rims, will produce a harsh ride, and will not make you faster.
100psi is more than you need in a 23mm road tyre, if you're light!

i beg to differ, but it makes a huge difference when the rider is heavy.

and 80psi for my 26" x 2.125" MTB. thats the max rated limit for each.
i'm just over 125kg

the number of pinch flats is unacceptable.

Well, I certainly wouldn't recommend a 21mm tyre to someone as heavy as
you. That's just daft. The only place I see road tyres <23mm these days is
in bargain bins.
