Just put some 2nd tyres on to my mountain bike wheels, but now discovered
they are too wide for the current brake as they are set. Is there a way I
can readjust the brakes so that the wheels can fit in properly?

My Specialized Stumpjumper MTB runs 2.0 Specialized X-Roll knobbily tyres that are too wide to fit past the Shim LX V-brakes in the disengaged position (cable seat disengaged from one of the caliper arms) .
So I force the wheel through.Is this what you mean?
Alternatively, I've found that V-brake pads have 2x different sized spacers along their mounting bolt which can be swapped (1x spacer sits btwn the pad & the brake arm where's the other usually resides btwn the arm & fastering nut - outside) to space the pad away from the caliper brake arm. This allows the brake arms to sit out wider & not foul against the sides of fat MTB tyres.
Is it V-brakes you have?

Yes, since the each pad has a wire connecting to it, hence it looks like a

tyres to fit them in? Then pump up tyres once the wheel is fitted in place.
Many MTB rims these days are quite narrow and the wide 2.1 tyres (fully
inflated) will not fit past a correctly set up rim brake even with the quick
release off.Cheers
