  1. I noticed on the Slim Fast Optima ingredients that it contains hydrogenated
    soybean oil, but the ingredient list also says that it has 0 grams transfat.
    I thought that hydrogenated oils were transfat, so I'm confused about this.
    Does anyone have an explanation? Thanks, Kevin

    What is the portion size?

    BTW, hydrogenation of soybean oil can produce saturated fat and no trans
    fat. Partial hydrogenation produces trans fat.

  3. It just means not enough to count within the parameters that the
    government set for labels.

  4. They allow the labels to lie, due to political influence. Keep watching for
    the words "partially hydrogenated."

  5. One article on the internet I ran across said that it is possible for the
    label to say "0 grams transfat", but also list "hydrogenated vegatable oil"
    or "partially hydrogenated vegatable oil", if the amount of transfat per
    serving was less than .5 grams.

  6. This is an obvious example of the misleading nature of "nutritional
    science." They categorize fatty acids, for example, into saturated,
    monounsaturated, or polyunsaturated, yet this tells you nothing about
    the physiological effects of these oils, and probably does more harm
    than good, even if we ignore how the authorities feel that they can
    determine the relative (statistical) risks of one contrived category of
    "food" versus another.

    Just to repeat what has been said already:

    The "0 grams trans fat" label means "less than one gram" (probably 0.5g or
    lower).
    You can hydrogenate oils completely, then they really have (in the best
    case) no trans fats at all (however, the technology is not perfect).

    Transfats are definitely a very minor thing to worry about at these
    ammounts.

    How dangerous are trans fats? Wikipedia references the "Walter Willett
    Nurses Study" claiming tht the study of 80,000 women concluded that a
    2% increase in "trans fats" increased a womans risk of heart disease by
    93%.

    Are trans fats metabolized at a rate comparable to saturated fats?

    But, if I recall correctly, that "less than..." applies to a portion,
    and the producer decides what a portion is...
