Too Many Plums & Pears

  1. Hi all,

    I went to see a friend a few days ago & she gave me 4 baskets full of plums
    & pears. Right now I'm making a crumble. I'd like some suggestions on what
    to do with the rest. Can I freeze some for a later use? can I make crumble
    and freeze it unbaked?

    Spoons do you do any kind of canning? If so, you can make plum sauce
    and can the pears in halves in a light syrup. Plums can be canned,
    froze, made into chutney, dried, and made into jelly too. Pears make a
    great chutney as well. BBB says pears can be frozen. I can't vouch for
    this as I've never frozen pears but BBB has always given good advice.
    Wash peal and core pears. Leave in halves or cut into quarters or
    slices. Treat to prevent darkening. Prepare a medium syrup and bring
    to boil. Drain pears. Blanch pears in syrup for 2 min. Cool pears and
    syrup. Pack into freezer boxes. Ladle syrup over pears leaving 1/2
    inch headspace. Freeze.

    Plums are great in Clafoutti. Split the plums, remove seeds and macerate then
    for an hour or so in a bit of brandy, then place them in the bottom of the ban
    and pour the batter over them.

    The best jam I made last year was with yellow-fleshed black plums. It
    turned out dark purple and tasted great. They also make good jelly if
    you've got a bunch of 'em.

    I like pears canned in light or medium syrup. Hard gristly pears can
    especially well. The only time I tried freezing them, I didn't like
    them because the got too soft.

    If you wait long enough and let the pears get overripe, you can cook
    them (after coring) until tender, drain them and run them through a food
    mill. Add an equal amount of sugar and a ground up orange (less the
    seeds, but leave the rind) and cook until thick for Pear Honey. Make
    Plum Butter from the cooked and milled plums. Rec.food.preserving is
    the place for canning info if you've never done it before.

  6. I have used an applesauce recipe to make pear sauce. It turned out very
    good, although it wasn't as smooth as apple sauce. I made it with the
    traditional cinnamon recipe and another with "red hots". Both came out very
    good. My cousin dried them. I can the plums in BWB for 30 minutes, same
    with pears.
