  1. I have some smoked sausage that has been in my frige for some time and I am
wondering if it would be safe to eat. I mean it has been there a couple of
months. It is sealed in plastic and has not been opened. I sure don't
want to eat it if it is going to make me or someone else sick.

Since they are sealed, they're probably alright. Is there a sell-by or use-
    by date on the package?

as would I (assuming you mean a ready-to eat smoked sausage. If you are
talking about the kind that you find in the case with the kielbasa, I'd
fry up a piece and taste it. maybe.)

  7. Sealing them is one thing, but it also seals in mold and bacteria. If
they were in there in significant colonies, they'd have grown by now,
even in the fridge. If the sausage looks or smells spoiled, it is
spoiled. Otherwise, cook it well to kill any small colonies that might
remain. This is true even if it was "fully cooked" in the package.
Even though it's been cooked at the plant, it was handled during
    packaging.

The package probably has an expiration date. Check the date. Open the
package and see how the sausage smells. If the sausage smells normal, it
should be fine. Just be sure to cook the sausage thoroughly.

It turned out to be sour. When I opened the package and smelled it smelled
sour so tasted a little piece and that was my answer. To the garbage it
went. Thanks for all the answers I received.

Sealed in plastic it's probably one of those cheap generic types often
displayed in stupidmarkets (the plastic wrapping acting as the casing),
especially around holiday time... often available in gift packs, with
lousy cheese and terrible crackers. That stuff is awful even if fresh,
it's mostly smeary grease with a bit of nondescript meat trimmings and
lots of salt with artificial liquid smoke... it's what cheap [censored]
buy for an obligatory gift to give to someone they really don't want to
gift. Anytime someone gives me such a thing it goes directly into the
trash unopened... I wouldn't feed that garbage to a starving stray.
Btw, it's probably not spoiled, that stuff contains so much
preservative it can last for years, typically unrefrigerated, it just
    normally tastes and smells rotten.

    Good points actually.
I'd forgotten just how awful that stuff was last year and bought a 2 lb.
    one.

Tried slicing it thin and frying it, it was still awful.
I froze it in 4 oz. chunks finally, trying to figure out what the hell
    to do with it.

I finally tossed it in the trash a couple of months ago when I was
    cleaning out the freezer.

I can't believe I ever thought that stuff was tasty!
Now that I've learned to cook, my tastes have really changed for the
    most part.

I still like Kraft cheese and macaroni tho'.

    Go figure. <lol>

she could boil the meat long enough to kill any parasites...but it

that's what Moma has always told me to do with anything I anticipate
putting into my mouth..."Smell first"...then "Taste"...if it passes
the smell and taste test it is probably ok...if you really want to eat
the rotten meat heat it until you kill all the fungi present...I heard
about a grocery store that used chlorox to sanitize their rotton meat!
Somehow I just don't think I could eat whats left of the meat after
    going through the sterilization process.

  16. Salutations, gentlefolk,

I usually deal with the 'sausage' I get gifted with by whacking it up
and tossing it in the rice cooker - along with the rice and water, of
course. Figure that the long period at boiling temperatures will kill
any nasty little beasties - anyway, ain't killed me yet.

Sometimes will take ricecooker pot, fry some onions up therei
beforehand, may also rinse out almost-used-up mayonaise or spaghetti
sauce jars, catsup bottles, add excess pickle juice ... Deal with
canned vegetables by adding can liquid as part of rice water, pouring
in vegetables to steam when rice is about 2/3 done.

Hope y'all have a happy, healthy and prosperous 2006 !

    Yours, John
