    I was watching the TV show, The Restaurant the other night
    and noticed when Rocco was cooking (what little he did/does)
    he would take salt and raise his hand over his head and sort
    of throw it at the dish. Later, I saw another cook do the
    same thing. Am I seeing this correctly, and if so, why do
    they do that other than showmanship?

    He wasn't throwing it over his shoulder. He was salting the
    food and doing it from above his head.
