    Well, one reason anyway...

Pre-LC I used to have cream cheese and crackers every day for an evening
snack (we eat our dinner early in the day). And a few days ago I started
wanting some cream cheese, so I bought it, but didn't know what to put it
on. (I'm sure you all have lots of ideas right? 🙂...) So here's what I
    did today:

i eat cream cheese on pork rinds 🙂

I seared some boneless/skinless chicken breasts in a pan, then added
    chopped
frozen bacon and some water (because I'm out of broth), covered it,
    lowered
the heat to medium, and let it cook for about 20 minutes.

Meanwhile I defrosted some spinach and squeezed all the water out, and
    nuked
a brick of cream cheese with 2 Tbsp of butter just long enough for the
cheese to get soft and the butter to melt, then mashed it all together
    while
I nuked the spinach for 2 minutes. Mixed it all together, plated the
chicken with a few bits of bacon, put the creamy spinach mixture on top,
    and
satisfied my "cream cheese tooth". I don't know how my husband and
    daughter
liked it but what the heck, mom was happy <G>.

I have a sign in my kitchen that says "If Momma Ain't Happy, Ain't Nobody
Happy!" I found it for a dime at a weird thrift shop LOL

Celery sticks are your friend when it comes to spreadables. :-)

That mix sounds wonderful and would go very well with celery, and maybe
    some slices of peeled cucumber?

Use cucumber slices as "crackers" for cream cheese
with lox, or chunks of sardine, or caviar

Also, peel a plump cucumber and cut in half the long way, and scoop
out the seeds with a spoon to make cucumber boats for fillings like
    tuna/chicken/egg salad.

could you use soy bacon or turkey bacon to cut down the fat there and use
    less cheese?

You can also buy fat free cream cheese.
I don't care that much for it tho', but it might
work well in a cooked recipe?

  15. sounds good to me, too.

I like to put a smear of creamcheese on a slice of sandwich ham or
turkey breast..roll em up. Adding some chopped celery sounds good, too.
