How? With a fork. I wasn't impressed by the green lips. They were
flat and had other qualities I didn't like (it's been so long, I've
forgotten), not sweet & tasty, and didn't merit spending the extra
money again. As for cooking, I like to taste the meat so I don't get
too fancy, my favorite way is to steam with a little wine & garlic and
eat (sometimes opened on the Q like oysters or in a very simple pasta
dish) with french bread and salad on the side.
BTW: I buy fresh, never frozen. One experience with frozen was
enough for me.
As far as which mussel I like... it's just labeled "mussel", nothing
fancy. It's black on the outside with a purple inside shell. The
cheap one.... California Mussel, Sea Mussel, Black Mussel, Blue
Mussel? Not even the places that grow them put a name on them.
