Third attempt at low carb rice ... plus a fast food question

    Thanks to all those who took the time to respond to my query. I take
    the point that low GI and low carb aren't the same, but I do think they
    complement one another. Most people, like myself, will never stick to
    any diet 100% of the time, if for no other reason that if they had that
    much discipline they wouldn't have got in a state where they needed to
    diet! Having low GI alternatives to some foods helps me as part of an
    overall strategy to change my eating habits and loose weight.

    A question about fast food: what are peoples favourite low carb fast
    meals and store cupboard stand-bys.

    Some of mine are:

    Hot and sour soup - Thai versions tend to be lower carb than Chinese

    Taramasalata (hunt around for a brand with fewer carbs eg 4-5g per tub)
    as a dip for pre-cooked crispy bacon and spring onions (scallions).

    Tete de Moine cheese - you can buy a brilliant little machine (a
    girolle) to shave "flowers" off a whole cheese. Brilliant as a low carb
    snack.

    A good whole salami to carve when you want.

    Curried eggs - hard boil, peel, halve, mix yolk with curry powder and
    mayo and re-fill half egg. If you store before mixing the egg, mayo and
    curry they keep a while in cling film and are very quick to prepare.

    Bags of salad leaves.

    HAHA! I rolled my eyes when I saw the subject line 🙂.

    For quick meals/snacks I keep:

    - broccoli and cauliflower (raw & frozen) to "beef up" casseroles and for
    dipping
    - tuna which I love with mayo and celery as a dip for my pork rinds once or
    twice a week
    - romaine for my beloved wraps, I could wrap them around anything and have a
    great meal
    - 1# packages of frozen ground turkey which I can fix 101 ways <G>
    - hard-boiled eggs
    - STRING CHEESE! can't forget that, one piece lasts a long time if you make
    lots of strings!

    Those are just a few things that are always in my shopping cart these days.

    fridge. For a fast dinner, I pan fry a couple of hamburger patties
    and have them with a 'choke.

    and cabbage on hand.

    I also cook up a bunch of chicken or turkey breast at the beginning of
    the week.

    Other staples:

    o Raw unsalted pecans, walnuts, almonds, brazil nuts
    o Extra sharp cheddar and blue cheese
    o Cottage cheese
    o Hard boiled eggs
    o Frozen shrimp (peeled/deveined) and salmon

    Ohhhh, I've been on an artichoke kick lately too-Sam's Club having them 6
    for $5 doesn't hurt either!

    There used to be a low GI section over at About.com, I remember it because I
    didn't know what it was at the time. I think they have newsletters on all
    kinds of subjects so you might try there.

    It being spring and all, I buy a ton of asparagus at the farmer's market.
    I find that nuking it in the microwave for ~3 minutes (ymmv) cooks it
    perfectly. Some fresh butter for the asparagus and then some steak that
    I've cooked in advance and I'm good for dinner.

    I also buy some packaged lettuce mixes at the farmers' market. They keep
    for about a week and all I have to do is open the package, rip the lettuce
    into pieces and give it all a rinse. Add some cheese and a homemade
    balsamic vinaigrette (I'm maintaining, the carbs in balsamic vinegar
    aren't enough for me to worry about) and I have a truly delicious dinner
    in about 5 minutes.

    Good idea about the 'chokes. I love 'em and have gotten out of the habit
    of eating them. I imagine the process of eating them makes dinner itself a
    more leisurely activity.
