If you're gonna grill the pork, why not also grill the eggplant? That way, you won't have to use the stove and the heat stays outside of the house. Just a suggestion, of course 😉

Works for me. I'd use lime juice instead of vinegar, though. Maybe a splash of olive oil, too.

If I were to make your version, I'd be sure that the vinegar was apple cider vinegar. Or just use the lime.

I got pork chops at Tomaso's last night. Billed as having a blueberry sauce. Turned out, it was a sauce made from the fond, with some blueberries tossed into it.
Not bad, but a bit disjoint. Blueberries were a good choice, but having them infuse the sauce might have been a better one. I was less thrilled that the chop was overcooked and the knife was dull.
