thin scum on pickled peppers

  1. Hi, I recently bought a large jar of 'pickled mild peppers', which said on
    the
    label it was from Turkey.

    Nearly two weeks later, with the jar only half used; i find a kind of thin
    mildew/fungus scum on the surface. It seems to wash off the peppers very
    easily though, as they tend to get some of this scum on them as they are
    pulled out of
    the jar.

    Is it safe to do this, or should they all be thrown away please?

    Also would it stop this scum on the surface forming, if we were to put in
    some concentrated vinegar. Or is there another way?

    Well, if it's anything like the slightly slimy/funky scum that forms
    on sour kosher pickles from a barrel, then it's nothing to worry
    about. Just give the peppers a quick rinse before eating them if you
    like, but it's not necessary.
    If the scum is dark in color or smells funky then I'd toss it.

    I think it is reasonably safe to eat the peppers at this stage (after
    washing of course), but only reasonably -- meaning that you *probably*
    won't get violently ill. There is however a risk. It sounds like the
    label should say on it, "Refrigerate after opening". If you had kept them
    under refrigeration anyway, I would definitely throw them out.

    As for vinegar, it is a natural preservative, but it will probably change
    the taste a little. (Of course you could add some of the modern chemical
    preservatives, some of which are surely carcinogens, but I wouldn't even
    know how to procure any.)

    Some recommend drinking pickle juice and other similar juices, such as
    sauerkraut.
    It might have been discussed here.
