The Beef Jerky question.

  1. All beef or turkey jerkies I've seen have high carbs.

    The product is made with lots of sugar I understood.

    Can anyone suggest no carb jerky?

  2. There is none available widely, from what I've seen but if you know in
    someone or some smallish company in the industry, maybe requesting batches
    made with Stevia rather than sugar and molasses and corn syrup might work.
    I get mine from a whole in the wall soccer mom store in Kamloops, BC.

    There are some jerkies with very low carb levels per serving.

    You need to look harder.

    Also, consider learning how to make your own jerky, as you'll have a wider
    range of options that way.

    This place claims to have 5 with zero carbs, but we all know eveything
    has some carbs.

    I have never seen one so I bought a dehydrator and started making my own. If
    you google the group and search for Jerky and Dehydrators you will find we
    had a huge discussion on the topic, probably during the summer (my name was
    Dropped back then)

    Actually - now that I recall - I think some websites sell no-sugar jerky.
    Should be able to google that too!

    There is no need for a sweetener in jerky. It comes out amazing with just
    Soy sauce, Worcestershire, garlic and black pepper. My alternative recipe is
    Red Pepper Sauce and some salt instead of the soy and worcestershire.

  7. ya, though I think soy sauce is pretty carbish. Depends on the brand, I
    think the Japanese style (Kikkoman) has sugar in it of some kind. The owner
    of the business never gave me any options, just made up this batch 'for
    diabetics' for me, and she said she would use the stevia. I don't think I
    would miss it.

    make yourself if you can get the beef on sale. I bought the dehydrator from
    Wal-mart for 40$ and it's great. I get a huge batch of beef jerky in about
    2.5 hours

  9. OK I checked up, there is '1/2 gram/tsp' carbos in 'soy sauce' which must be
    from some kind of sugar created in the brewing and fermenting processes. I
    don't think that the Kikkoman processing is necessarily unique, but as they
    say, they don't add any carbs (sugar) ? So does Kikkoman do something to
    its product to extract that carb, if it is part of the natural process?
    Stupid pointless question I guess overall, unless you gargle with soy sauce.
    They the salt would rust out yer pipes.

    i think since the amount is so small .5 gram.tsp they might not have to list
    it? I think it comes from wheat - that is listed on the ingredients.

    i'm not trying to be nit-picky - just thought i'd let ya know what i do in
    case it helps. it helped me soooo much during induction and goes great with
    scrambled eggs :oP

  14. The truth be known, my spouse told me about high carbs in soy sauce. I just
    looked at a label at one of the less expensive varieties of soy sauce and it
    shows 9 grams of carbs per 100 ml of sauce which is about on course with the
    other index, I think. She must not have been wearing her cheater glasses
    when she looked on the bottle and didn't see the dot between the 8 and the
    9, as in 8.9. I shoulda looked it up first. I like HP that has 4 gm/tbsp
    but I thin it with sesame oil and some white vinegar.. Its good stirred
    into carmelized scallions and daikon with mushrooms and ginger and sliced
    thin and fried crispy in bacon fat.
