  1. And slow race horses, too.

    I bought a very pretty jalapeno at the store this afternoon to put
    into my mango and jicama salsa for tonight's dinner. I diced the
    mango and jicama. I added some finer dice of cucumber, some lime
    juice, some olive oil, some chopped cilantro, salt and pepper, and
    half a finely diced jalapeno. I gave it a taste. No heat.

    The [censored] sold me a mild jalapeno. You might as well eat celery.
    I mean what's the point of a mild jalapeno? If you don't want heat,
    just don't use the damned chile to begin with.

    *Sputter* Hrummmph Grrrrrrrrrrr.

    Some ideas are simply not improvements. Concrete airplanes, for
    example. Or peg board roofing.

    I agree, Modom. There has been some mention of this "mild jalapeno"
    problem on RFC lately. I mentioned it to the produce man at
    Albertson's recently, and he was very familiar with the problem.
    Jalapenos have been "dumbed down". I don't know what type of chili
    pepper to substitute now.

    The heat in a jalapeno, as with any chili, is determined by the weather.
    A cool wet season will produce mild peppers. As far as an intentionally
    grown mild jalapeno, don't people have better things to do with their
    time than screw up good food? Maybe you should try a different pepper.
    Serranos aren't bad. Here's a link to a site that has a lot of info on

    I've had some jalapeno's that were as mild as a green bell pepper, and a few
    that would take your head off. I can't tell by looking.

    I've never run into a hot jalapeno and never understood them being called
    "hot". But then again, I tend to have a tolerance for more heat on the
    tongue than a lot of people. I find, in particular, when a jalapeno is
    sliced and baked in something like cornbread or some sort of casserole dish
    they add a nice taste but not that "bite" some are looking for. On the flip
    side, even mild jalapenos are far too hot for some people.

    Anyhow, habs and jals have totally different flavours, so that won't quite
    work if you want the jal flavour too...

    Don't count on it. I got some Habaneros a few weeks ago that were pretty
    wimpy.

    Habanero.

    I always sub Serranos for Jalapeños since the Texas A&M wimp Jalapeños
    took over the market. The flavor is as close as you'll get and no one's
    messed with their genes yet.

    That's what I did last night for a grilled corn and black eye pea
    salad. Serrano is the way to go till the Aggies turn their attention
    that way. Habs, with their apricot/tangerine flavors, work better in
    fruity concoctions.

    This has happened to me before, getting a wimpy one from my local
    market. Shortly after I posted about the mild jalapeno, I ran back
    over to the store for some beer and picked up another jalapeno.
    Before buying it, I snapped it open and took a big bite. That'll
    teach me: It was pretty fiery. I mean I wasn't weeping in agony, but
    my mouth lit up and my nose started running. It would seem that some
    of the mild hybrids got mixed up with a normal batch.

    I'm going to switch over to serranos for salsas and relishes. They're
    more predictable.

    Instead of buying the pretty blemish-free peppers, look for the ones
    with cracks and checks in them. Not necessarily wilted, just little
    vertical cracks. They'll be hot.
