I broiled them. Shallow pan, a little butter melted in olive oil. Grated
tellicherry pepper, a sprinkling of Penzey's Parisienne bonnes herbs and
salt. 20 minutes all told (turned the swordfish after 10-12 minutes).
Meanwhile, I washed and snipped the fresh spinach leaves and put them in a
steamer basket. To a little bit of water I added a couple of cloves of
garlic. I had a jar of hearts of palm I'd bought on a whim. I cut them in
half and reserved the brine. Added them to the steamer basket then added
the brine to the water for the steamer. Steamed the spinach/palm hearts
about 5 minutes until the spinach was wilted and the hearts of palm were
heated through.
I had a can of chilled mandarin oranges so I had a few slices for "dessert"

The swordfish was very tender and quite tasty. The veggies were delicious!
(I probably won't buy hearts of palm again since it kills an entire palmetto
tree to come up with these things; I was just curious this once.) I still
have another swordfish steak, more of the veggies and the rest of the
mandarin orange slices for tomorrow, although I may just eat the oranges wth
toast for breakfast 😉
