Taboule', or tabuleh or tabule', is a tipical nord african cus cus salad.
My grand mother who was born in Tunisia from sicilian parents, made this
easy dish very familiar to me and the rest of my family.
You can use both cus cus (or "cous cous"😉 or burghul that are almost the
same thing.
This dish is made cold, without any heating, so it is perfect for this
hot season!
It is better to use a parboiled cus cus, for a faster... and fresher
preparation!
Ingredients (4 persons):
250g parboiled cus cus or burghul
500g tomatoes (possibly peeled, but this would mean a brief boil...)
Or 500ml of tomato sauce (possibly in small pieces, not the liquid one)
4-5 mint leaves
1 and 1/2 tsp salt
The juice of one big lemon.
Optional one small onion
Olive oil
Pick a salad bowl and put the cus cus in.
Cut the tomatoes in really small cubes and add them to the cous cous
Squash the lemon, and add the juice in the bowl.
cut le mint leaves, by hand, and the small onion, add them in the bowl.
Now you can mix the bowls content, and wait some minute, covering the
bowl with a microwave film, to avoid the liquids to evaporate.
Afeter some minute the cus cus should be soft, if not add some water,
adn wait some more.
When it's soft, fluff it and add salt and olive oil as you like.

PS:There are many variations of taboule', and you could even simply make
a cus cus salad, with averything you like! Without cooking!!!
