    Commercial-grade mozzarella.

    By the looks of my kitchen the other night fresh mozzarella is pretty
    stretchy. Alas, that doesn't often pop up on the topping list in most
    pizza joints, so I've got to go with the same answer that Steve gave.

    Mozzarella does a similarly great job on hot meatball subs!

    My markets sell fresh mozzarella, and a few other versions
    as well, including the shredded stuff in a bag.

    Which (if any) of these would you be calling "commercial?"
