I could go on. <G> We pretty much live low carb and steamed
fresh veggies and fresh pan broiled meats are the mainstay
of our diet.
Funny how my grocery bill went _down_ when I increased the
fresh veggies! I often serve fresh sliced tomatoes on the
side and the garden is currently producing.
Try an oriental market to increase your pallet of
fresh veggies.
Personally, I usually spice them lightly with lemon pepper
and toss with a bit of olive oil and steam them in my pasta
cooker... It doubles as a large steamer. :-)

Vitamin/mineral content, yes, Fiber content, no.
The less they are cooked the better. I like just a bit of
crunch when they are done, but not too much. I cook carrots
and radishes a bit softer.
